American Hotel and Lodging Institute Certification
The following courses prepare students to take the national certification exam that is acknowledged by the global hospitality industry.
Managing Service in Food and Beverage Operations (HRTM 211)
Students can obtain valuable knowledge in how food services professionals create and deliver guest-driven service, build guest loyalty, and promote repeat business. They also explore operations management techniques for both front and back of the house, such as cooking, baking, safe equipment operation and maintenance, dining room operations, and beverage service. The students develop a sound foundation in all aspects of restaurant operations, which allows them to develop these skills further in subsequent classes. Upon completion of this course, students are required to be ServSafe Food Protection Manager certified.
Contemporary Club Management (HRTM 261)
The Contemporary Club Management certificate certifies students to become effective club managers in communications, membership marketing, club food and beverage operations, golf operations in club, and overall responsibilities in the complex world of private club management.
Planning and Controlling for Food and Beverage Control Operations (HRTM 310)
This certificate acknowledges students understanding of the control processes that are used to reduce costs and increase efficiency in food and beverage operations in restaurants and hotels. Students will gain practical knowledge in planning and controlling functions that can help operations work smarter, compete for market share, and provide the best value to guests.
Hospitality/Beverage Specialist (HRTM 311)
The Hospitality/Beverage Specialist Certificate (HBSC) is an entry-level beverage knowledge certification designed specifically for hospitality staff including servers, bartenders, cooks, etc. Many people use this course as a “jumping off” point into other more advanced certifications. The program covers a wide range of beverage topics such as coffee & tea, beer, wine, spirits & mixology, sake, and cider & perry. Students learn sensory evaluation, proper tasting techniques, and beverage service.
Fundamentals of Destination Management and Marketing (HRTM 334)
The fundamentals of destination management and marketing certificate certifies students in the understanding of the functions of destination management, from sales and marketing to research and performance measurement. Students will gain insights from different leadership roles in convention and visitors bureau (CVB) in areas such as communication, product development, financial management and membership management.
In addition to the certificate, students in the course will examine the economics, social, and political impact of national and international destinations, critique effective tourism destinations with regards to marketing, management, and human resources leadership skills, evaluate and communicate with specific national and international destinations and stakeholder such as convention and meeting planners, tourists, and business travelers.

The Society of Wine Educators (SWE) is one of the premiere institutions focusing on wine and spirits education.
Certified Specialist of Wine (HRTM 213)
The Certified Specialist of Wine (CSW) certification is provided by the Society of Wine Educators which is one of the premiere institutions focusing on wine and spirits education. The CSW certification is one of the few programs recommended by the American Culinary Federation in preparation to become an ACF Certified Master Chef. The CSW is the most-pursued certification offered by the Society and has been used to train wine salespeople, wine importers & distributors, vintners & growers, as well as sommeliers & other hospitalitarians. The CSW exam tests a student’s wine knowledge and mastery of key elements such as viticulture, wine production, wine culture, and terroir.
Students who pass this rigorous exam and earn their credential are entitled to use the CSW post-nominal as part of their professional signature. Successful candidates are internationally recognized and respected for their wine knowledge, professionalism, and dedication to the wine industry. The CSW credential allows advanced placement into more higher-level wine certification programs.
